Embarking on the culinary odyssey of The Greedy Potato. Which has been a labour of love, steeped in the rich and fragmented tapestry of Eurasian food traditions. The journey to develop this unique cuisine is no simple task, as the recipes and techniques, handed down through generations of intermarriage between various Europeans and Asians, are as diverse as the families that birthed them.

 

The challenge intensifies as the vibrant Eurasian community in Singapore faces a decline, marked by the passing of elders, emigration, and intermarriage with non-Eurasian ethnic groups. The preservation of these culinary gems becomes an arduous task, with recipes and practices varying significantly from family to family.

From a young age, the quest to collect and master these recipes has been fraught with difficulty. Standardizing the diverse array of products cannot capture the nuances that make each family's dishes unique. The struggle is not only internal but extends to introducing these unfamiliar flavors to non-Eurasian Singaporeans, adding an extra layer of complexity to this culinary journey.

 

Countless hours have been devoted to mastering quintessential dishes and cooking techniques, seeking the approval of numerous Eurasian mothers and grandmothers. While many have embraced and celebrated the culinary offerings, the challenge persists. The ever-evolving nature of Eurasian cuisine, coupled with the impossibility of pleasing everyone, hangs in the air, a constant reminder that this journey is one of perpetual dedication and adaptation.
